DAY FORTY NINE:
Late night leftover taco night salad….romaine+taco seasoned ground beef+jalapenos+green pepper+white onion+smokey chipotle salsa…sounds kinda odd…tasted kinda amazing…
DAY FORTY EIGHT:
I’m on a roll here! This girl never goes out then two dinners out in a row, woohoo! This nourishing and satisfying salad was had at Crush Bistro, it was a Super Food Greens
Garden Kale, Rainbow Chard, Spinach w/ Avocado, Orange, Almonds,
Happy Days Farm Goat Cheese, ‘Rancho Vignola’ Goji Berries w/ Wild Smoked Salmon. Also had some mussels, some warmed olives and Summerhill Cipes Brut, yum!!!
DAY FORTY SIX:
turkey veggie scramble (ground turkey, garlic, onion, green pepper, yellow pepper, zucchini, mushrooms, thyme, salt & pepper) + green bean french fries (+LOTS of red hot, lol!)….pushing the “salad” limits again, but the guys ordered pizza tonight so I got to cook all for me and choose exactly what I and I alone wanted (whoohooo! no compromising!) and this is my fav quick easy healthy meal that feels unhealthy and treat-like 🙂 These green bean fries are awesome! Greasy, salty and dripping in red hot….mmmmmm…..
DAY FORTY FIVE:
classic coleslaw + bbq honey thyme chicken thighs + greek tomatoes (chopped tomatoes tossed in evoo, red wine vinegar, dried oregano, salt & pepper)….I LOVE coleslaw! I make my own dressing subbing out honey for sugar and almond milk for the milk and ya know what?? My family has no idea, it tastes just as good 🙂 Win!
Grilled Teriyaki Beef & Veggies (carrots, celery, peppers, mushrooms & onions in a sauce of tamari, honey, orange juice concentrate, fresh minced ginger, garlic, white onion & chili peppers) on Zucchini Strips or “zucchini fettuccini” if you like…Pushing the limits on “salad” definition this eve I suspect…but it was worth the push, it was pretty good!
DAY FORTY THREE:
green apple, celery, white onion, toasted pecans & goat cheese on red leaf lettuce + thin slices of garlic crusted roast beef…so tasty!

I have used this recipe many, many times, using less expensive cuts of meat and it turns out perfect every single time. Recommend! I felt like something zingy, and that was satisfied with this salad. Dressing was a simple mix of lemon juice, mayo, red wine vinegar, evoo, salt & pepper.
DAY FORTY TWO:
roasted cauliflower, carrot & toasted cashew salad with a simple dressing of fresh lemon, mayo, evoo & chives & lots of spicy chili flakes + apricot olive thyme chicken….THIS was good! It may not look like much, but the combo of the salad & chicken was great! And it was super easy and quick to put together, will be recreating this one again!
