Just me for dinner tonight, so something quick ‘n easy, coleslaw + dried cranberries + pumpkin seeds + green onion + Italian canned tuna (SO GOOD, packed in olive oil, salty, delicious, costs 3 X’s as much as typical tuna but so worth it)

baby spinach, roasted beet, goat cheese & dill salad with a ground beef & veggie (peppers, mushrooms, zucchini & onion) omelette

No better way to start the day!  Fresh air, blue skies, sunshine, great company…and an intense one-hour full body workout!  Build muscle, burn bodyfat, increase your cardio endurance and improve your mobility and flexibility in a beautiful outdoor setting…

Taking your basic bootcamp to the next level, this class will include a dynamic warm-up, mobility drills, combinations of HIIT/interval training, circuits, metabolic conditioning, plyometrics, strength training, kettlebells, sled work, trx, body weight exercises, speed training, agility drills, core work, flexibility training and more that will motivate and inspire you to push past your limits…Effective, efficient and interesting programming,  we will never do the same workout twice!

For all fitness levels, you will be carefully and safely coached with appropriate modifications/progressions to ensure each participant has a challenging and effective session.

$10 per session

We will be utilizing the amazing outdoor amenities that Vernon has to offer.  Parks, beaches, trails, etc, let’s make the most of this gorgeous place we are lucky enough to call home!

DAY THIRTY EIGHT:

Oh yes, the Mediterranean Grilled Salad…this was a good one!
grilled chicken thighs + grilled veggies :  baby eggplant, zucchini & red pepper + pan crisped garlic + anchovies + avocado slices + wedged tomato + fresh torn basil leaves + red onion + red leaf lettuce + balsamic & honey dressing

DAY THIRTY SEVEN:

burger night!  hamburger pattie on a “pepper bun” topped with sautéed mushrooms, red onion, pickles & ketchup….and then on the side, a simple salad of tomatoes, red onion, fresh basil and feta on baby spinach, kale & chard with olive oil and balsamic drizzled on top

DAY THIRTY SIX:

greek salad (red, orange, yellow & green peppers, tomatoes, cucumbers, red onion, goat feta, kalamata olives & homemade greek dressing with fresh oregano) on romaine with grilled pork tenderloin souvlaki

Grilled Chicken Thighs w/fresh Cilantro, Mint & Basil + Grilled Peppers, Onions, Mushrooms + Tomato + Avocado + Baby Spinach, Kale & Swiss Chard Greens + Dijon Vinaigrette

DAY THIRTY FOUR:

Grilled Veggies & Prawns on Broccoli Slaw & Spinach….Finally got a new bbq!!!!  Yeah!  We’ve been having summer weather for a couple months now and without a bbq, it just felt wrong cooking inside every night, heating up the house.  So I’m happy to take things outside for a while!
This salad was a bit of odd combo, but the guys had bbq’d italian sausages on a bun, with grilled peppers and onions and coleslaw on the side…so I grilled myself some prawns and put it all together atop baby spinach…so good!  The best bite was a combo of the sweet smokey onion, zingy slaw and a garlicky herby (homegrown parsley! so potent and green!) prawn 🙂

DAY THIRTY THREE:

Roast Beef + Caramelized Onions + Broccoli + Fresh Corn Kernels + Diced Tomatoes + Avocado + Green Onion + Red Leaf Lettuce  + Balsamic Dressing….The guys had roast beef dip and caramelized onions and corn on the cob….My salad was fresh, crunchy, very filling & satisfying 🙂  Those onions were amazing on it!  Olive-oily oniony goodness apparently goes really nicely on a salad!  I really liked the contrast between the savoury roast beef and onions and the sweet crispy corn kernels that were sliced off the cob…
